Caviar Beef is a family-farm operation founded by three farmers—Russel, Brad, and Bert—that raises miniature Herefords, also known as Classic Herefords. The cattle are shorter in stature but known for rich flavor and tender cuts. Caviar Beef offers 21-day dry aged beef sold as wholes, halves, and quarters, and has expanded to offer premium beef sticks and jerky, which are sold at golf courses in East Nebraska.
